Tips & Tricks in Baking - Lesson 1 - Butter

Unul dintre ingredientele de baza in crearea unora dintre cele mai gustoase deserturi este UNTUL.
Cu el pregatim blaturi, aluaturi, creme, sosuri etc...
Din acest motiv este foarte important sa folositi unt proaspat, de calitate.

Cum sa testati daca untul este proaspat? Deschideti pachetul si razuiti suprafata untului cu varful unui cutit de masa. Daca la suprafata culoarea este mai inchisa decat in interior atunci inseamna ca acel unt s-a oxidat si va avea gust de ranced. Orice veti pregati cu acel unt va prelua acest gust asa ca mai bine nu-l folositi.

Daca gasiti vreo oferta si luati mai multe pachete, puteti sa le pastrati in congelator pana la o luna (mai ales cand e momentul sa facem multe prajituri - Paste, Craciun etc). Daca vreti sa le pastrati mai mult de o luna infoliati pachetul de unt cu folie alimentara, puneti-l in punga de plastic si eliminati cat se poate de mult aerul ca sa nu se oxideze.

Ce NU o sa vedeti scris in multe retete:
- de obicei in cofetarie se foloseste unt nesarat; de exemplu, daca reteta cere sa se topeasca untul acesta poate sa fie topit pana va prinde o culoare usor maronie si va avea un gust de nuca foarte bun, dar asta doar daca este nesarat. 
- untul gras (min. 80%) este foarte bun pentru blaturi de tort, prajituri, creme.
- untul mai slab este bun pentru aluatul de biscuiti si aluaturile de patiserie. Vrem ca aceste produse sa isi pastreze forma si dupa coacere, nu sa se extinda/creasca precum prajiturile.

Mie imi place foarte mult untul si nu folosesc niciodata margarina pentru a-l inlocui. Beneficiile pentru sanatate, aroma si gustul untului sunt, dupa parerea mea, net superioare. E alegerea mea personala si nu incerc sa va conving pe nimeni ca e mai bun. 

Stati pe-aproape pentru ca voi posta o reteta delicioasa de biscuiti cu unt care ilustreaza perfect tot ce v-am scris mai sus.

One of the key ingredients used in baking to create some of the most delicious desserts is the BUTTER.
We use it for cakes, pastry doughs, creams, sauces etc...
That is why it's so important to use fresh quality butter. 

To test for freshness, unwrap a stick of butter and scratch the surface with the point of a table knife. If the
butter is lighter-colored on the inside than on the outside, it has oxidized and become stale. Such butter won’t impart anything but a stale flavor to whatever you bake with it.

If you want to stock up on butter during a sale you can store it in the freezer up to a month. If you intend to keep that butter for more than a month or so, wrap the packages in plastic wrap and then foil to keep them as airtight as possible. 

What most recipes DON'T tell you:
- unsalted butter is usually used in baking; for instance, if the recipe calls for melted butter (for brownies), you can melt it to the point the butter turns brownish and has a nice nutty flavor. You can do this only with unsalted butter.
- fat butter (min. 80% fat) works well in cake batters and buttercream
- less fat butter is good especially in cookie batters and pastry doughs, which will spread more than they
would with fat butter. 

I personally love butter and i never use margarine to replace it. The health benefits, aroma and taste are, in my opinion, net superior. It's my personal choice and I'm not trying to convince others of it's qualities.
